I smoked a couple of chickens for Dinner today. After I pulled all the meat off the bone, I got the stock pot going around 1:30. It's 11:30 here and I've got 2 gallons of stock reduced to about a quart and a half. Once I get it down to about half of it's current volume, I'll pour it out on a shallow baking sheet and let it set. Then I'll cut it into squares with a pizza cutter. Homemade bullion cubes. Each cube will make about a quart of broth.
I'll be a little bleary eyed at work in the morning, but I'll post some pics of the cubes tomorrow.

My lack of sleep was for naught. I added some gelatin, but still couldn't get it to set up. All I have is some very concentrated chicken stock. I'll probably use it and the leftover chicken to make some white chili or tortilla soup.

Normally we freeze it in ziplock bags. I was hoping to have the bullion cubes to use this winter. Figured it would be even better than cocoa or decaf at night in camp. Just drop one in my mug and add boiling water.
It's just about the consistency molasses. I was close. I don't think I let it simmer long enough.
