I'll tell you tomorrow's...it was going to be for tonight but they aren't thawed out yet so I'll wait for tomorrow:
Homemade tamales, made by some teachers at my daughter's school as a fundraiser (authentic Mexican tamales). (what should I serve with them?)
Tonight's just spaghetti. Wish I could go to fraxinus's house instead. :)

Garbanzo Stew-
Saute 1 finely chopped medium onion in olive oil with 1 tbs garam masala paste. Add 4 cans diced tomatoes, 1 tsp sugar, 1 tsp curry powder, 1/4 tsp turmeric, and 1/4 tsp ground red pepper, cook about 10 minutes. Add 3 cans chickpeas (garbanzo beans) and cook for another 10 minutes.
Peanut Rice-
Cook 2 cups rice and water with 1/2 tsp. turmeric. When done add 1 cup thawed frozen peas and 1 cup unsalted, dry roasted peanuts.

Yummmmm!
I vote black bean or refried beans and a light salad as your sides and maybe some slices of avocado as a garnish... you could do a spanish rice but the tamales are already the starch on the plate.

Omg they were sooooo good! I just had steamed mixed veg with them, which wasn't going with the theme but was fine. I have more in the freezer. I'll cook the up on a weekend when the hubby is home and will have proper sides then. :)

Had some raw peanuts in the cupboard so I whipped up a batch of your Peanut Rice to serve with coconut curry chicken. It was very good.
The boys were initially a little freaked out about having whole peanuts in an entrée but decided it was a winner once they tried it.

OMG, the drama - whole peanuts in an entree! I'm glad they were able to "man up" and eat it. There's hope for the world yet.
How about sharing that coconut curry chicken recipe...

Not much to tell... no real recipe for the Coconut Curry Chicken as it was just a quick throw together cheater meal.
1 container Tikka Masala simmer sauce from Costco
1 container/box of Tomato Roasted Pepper Soup
Unsweetened coconut milk
1 cup diced onion sauted
1/2 bag frozen mixed vegies
3 chicken breasts cooked and diced
Normally I buy a premade coconut curry sauce at Costco which has a nice little kick. However Costco pulled a switch on me and the Tikka Masala that I grabbed by mistake was substantially spicier than the coco curry so I cut it with the soup and canned coco milk until I had the consistency and heat that I wanted and added the cooked chicken and sauted vegies because I pretty much always add vegies to anything I make.
