Corn Fritters Ingredients: 1 cup Hushpuppy Mix with Onion, House Autry 2/3 cups Corn, Harmony House 1/4 cup Crumbled Bacon, Crumbled (Hormel) Ghee, Purity Farms
Directions: Rehydrate corn; add 2/3 cups corn with 1 1/3 cups water. Simmer for about 10~15 minutes, or soak for 1~2 hours in cozy. Drain corn and retain 1/2 cup water for hushpuppy mix.
In a bowl, thoroughly combine hushpuppy mix and 1/2 cup water from corn. Let stand for 5 minutes.
Add corn and bacon to hushpuppy mix and combine thoroughly. Using a teaspoon, drop batter into ghee and fry for 3 minutes or until golden brown.
The House Autry bag says 20. That is teaspoon sized hush puppies. We formed them into pancakes, and I think we got 4~6 3~4 pancakes. They filled a 10" fry pan.
